Due to a feature with the iPhone Apple Mail Client, it blocks countdown timers from running properly, so the timer is stuck at the time they open the email. To stop confusing people by default, the countdown timer just won't show for Apple Mail users.
If you want it to show for them, make sure to untick the "Hide Timer in Apple Mail" checkbox under Styling settings of the timer:
